Jade Tieguanyin oolong Tieguanyin may be the most well recognized tea in and out of China. Traditionally this would be a more heavily roasted tea, but in recent years its become more in vogue to lightly roast it, or not at all, making it what they call Qing Xiang, or "clear fragrance" oolong. Where the roasting brings out more nutty, warm flavors the light roasting allows the varietals natural floralness to rise to the top, which i prefer, making it one of my favorite teas of all time. W in the chat for Taiwan This Taiwanese grown Wuyi cultivar tea comes to us from Liquid Proust, so as usual we dont really know much about it, lol. What i can tell you is that this tea is remarkable in its fruitiness and is the only tea I've come across so far with a distinct banana note. Similar to the double fermented chocolate water and Sweet Lamentations, it has a sweet bready note that makes the overall presentation a strong banana bread flavor. I bought extra of this guy because I have a feeling its going to be very popular. Violet Crown This is a tea that gets me super excited, and is as unconventional as it gets! We start with gushu plants, ancient trees, that have the purple phenotype. Then we process this tea into a red tea, fully oxidized and sweet. Then take that finished tea and inoculate it with jinhua mold to ferment it into a fuzhuan. The result is startlingly fruity, the hot leaves smelling like maraschino cherries and frosting. The flavor is deeper still with the woody, nutty notes that I love in a fuzhuan. This is the type of tea I want to covet and hoard like a dragon. All the more reason to share it. Goishicha aka Go-stone Tea This is likely the top contender for my all time favorite tea. Taken from the Bulang tradition of suancha (sour tea) this unusual post-fermented tea from Japan ticks all the boxes for me. Fermented Weird rare complex and unusual flavors This tea nearly went extinct in the early 2000s, and the tradition was kept alive by a single family, the Ogasawaras, and we owe them a great debt of thanks for doing so. Finished into little go stone shaped pucks, layered like baklava, it has a lightly smokey, cheesy and lemony flavor that must be experienced to fully grasp.
